Ingredients:-

  • 5 cups of fresh peaches, cut and peeled.
  • 1 cup finely chopped red onion.
  • 1 cup finely chopped red pepper
  • 2-3 jalapeño peppers (seeds removed for milder salsa).
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup lime juice, fresh
  • 1 teaspoon of ground cumin
  • 1/4 cup of apple cider vinegar
  • 1/2 cup of sugar
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of Salt.

Instructions:-

1. Wash the canning jars and lids in warm, soapy water to clean and disinfect them. To soften the seal, boil the jars for 10 minutes while soaking the lids in hot water.

2. Combine the cut peaches, red onion, red bell pepper, jalapeños, and cilantro in a big mixing dish. To spread the ingredients equally, gently mix the ingredients together.

3. Mix lime juice, apple cider vinegar, sugar, ground cumin, salt, and pepper in a separate saucepan. Mixing constantly, bring it to a moderate boil until the sugar dissolves. Give it a few minutes to cool.

4. pour the lime juice mixture on the peach mixture in the pot and mix it well.

5. Transfer the peach salsa, leaving a 1/2 inch headroom at the top, into a clean canning jar. Clean the rims of the jars.

6. Attach the bands to the jars, then put the softened lids on top. Tighten the bands just enough.

7. To hold the jars, use a canning rack or a big saucepan with a towel on the bottom. Make sure there is at least an inch of water on top of them. Give the jars a 15-minute boil.

8.After the processing completed use canning tongs to take the jars out of the canner. Cool them at cloth.
